Chicken Pizza

For the base (2 Pizzas):

Plain flour – 3 cups
Sugar – 1 tbsp
Salt – as required
Yeast – 1 tsp
Olive oil – 2 tbsp
Water - as required
Luke warm milk – 1/2 cup

For the tomato sauce:

Olive Oil – 2 tbsp
Garlic chopped – 2 tsp
Onion -1 (chopped)
Tomato - 2
Tomato paste - 2 tsp
Heat a saucepan to medium, add oil. Add chopped garlic, onion and saute well. When onion becomes soft add tomato and cook well it should be like paste. Add oregano, tomato paste and mix well.

FOR THE TOPPINGS

Chicken cooked and chopped (can use tandoori or barbeque chicken also)
Mushroom (cooked and chopped)
White Onion (chopped)
Capsicum (chopped)
Black olives
Tomato without seed (chopped)
Mozzarella cheese
Cheddar cheese

Method:

Pour warm milk into a bowl. Add salt and sugar and mix with a spoon, then add yeast, mix and let it stand for about 10 minutes.

Knead the dough until you have a smooth ball. Coat the dough with olive oil, place it in a large bowl and cover it with kitchen wrap. Let the dough rise for about an hour at room temperature.

Roll the dough into 12 inch circle about 1/4" thick and place it into pizza pan coated with cooking vegetable spray. Punch some holes in the dough with a fork to let the air escape while the pizza is in the oven. Bake it in pre-heated oven for about 6 minutes. Remove from the oven and coat with tomato sauce at top. Then spread pizza toppings (first add little mozzarella cheese then add one by one of topping ingredients, finally add both cheeses). Bake the pizza in preheated oven @ 180 C for about 15 to 20 minutes.
