Ingredients:
All Purpose Flour (Maida) -1 1/2 cup
Baking powder-2 tsp
Salt-1/2 tsp
Yoghurt -3/4 cup to 1 cup
Sugar-1 1/3 cup
Eggs-4
Orange zest (grated)-2 tsp
Vanilla essence-1/2 tsp
Olive oil-1/2 cup (or any other oil)
Orange juice (freshly squeezed) - 3/4 cup
Nutella- 2 large tbsp (for glaze)
Preparation of Orange Cake:
Grind sugar into powdered form & keep aside.
Mix flour, baking powder, salt, and powdered sugar in a medium sized bowl.
Thoroughly clean the outer skin of the orange & grate its zest.
Beat yoghurt in a small cup & make it smooth without any lumps.
Now combine yoghurt, vanilla essence, orange zest, olive oil eggs & beat well in a large bowl.
To this wet mix, whisk the dry mix to it & mix well without any lumps.
Now pour 1/4 cup orange juice to this & mix well.
Preheat oven to 350 degrees.
Butter the baking tray & pour the batter into it.
Bake for 40 minutes.
Else cook in a pressure cooker for 40-45 minutes without keeping the weight on top.
Once the cake is cooked, cool for 5 minutes.
Prick many holes on top of the cake with a toothpick.
Pour 1/4 cup orange juice on top spreading over.
Let the cake rest for 10 minutes to allow soaking.
Preparation of Nutella Glaze:
Mix nutella & the rest of the orange juice with a spoon. (it won't mix well)
Heat in microwave for 1-2 minutes until it becomes soft, smooth & silky.
Drizzle desired amount on top of the cake & just dig into it..
